homemade wheat bread
I love the slightly sweet earthy flavor!
I have tried a few wheat bread recipes in my day and have found this one to be my favorite so far!
The molasses and honey in this recipe bring a wonderful flavor to the bread.
Here's the ingredients and a tutorial! At the end of the post I will have the recipe that you can copy and paste so you can print it.
1 packet quick rising yeast
2 cups warm water
1/4 cup soft butter
1/8 cup molasses
1/4 cup honey
1 tsp. salt
3 cups whole wheat flour
2 cups white flour
Measure 2 cups warm water into a liquid measuring cup. Add the packet of yeast into the water and stir. Set aside.
Soften the butter in the microwave. Five seconds should do the trick.
In the bowl of a Kitchen Aid mixer, put the melted butter, molasses, honey and salt. With paddle attachment, begin to mix.
Stir the yeasty warm water again and then add to the molasses, honey mixture. Continue to mix slowly with paddle attachment.
With mixer on low, add the whole wheat flour...then add the white flour.
Mix until just combined. Dough will look very wet and sticky. Don't worry! It will be fine!
Turn off mixer, scrape dough off paddle attachment...
and switch to the dough hook.
Turn mixer on medium-high and knead dough with hook for 10 minutes.
Watch your mixer, it may "walk" off the counter while it is kneading the dough.
Here's what the dough will look like for the first 5 or 6 minutes...it still looks wet and sticky, but it starting to come together.
The dough will eventually start to look better and better. You can see the dough is firming up in this photo below.
After 10 minutes of kneading with the dough hook, turn dough out onto lightly floured counter. As you can see, the dough may be a tad sticky...just sprinkle dough with flour and begin to work it in by kneading.
Hand knead for 30 seconds to tighten dough....and that's it!!
Place dough ball into large greased bowl.
Cover with clean towel and put in a warm spot.
Allow to rise until double.
When dough has doubled, punch dough down with your fist.
Let dough rest few minutes.
Divide dough in half.
Press dough into 2 squares the length of your bread pans approximately an
8x8 square.
Tightly roll each square of dough into a log.
Pinch ends of dough and tuck under ends.
Place dough into greased bread pans.
Find a warm spot to let dough rise. I usually put my dough on a chair in the sun by my sliding glass door.
Cover pans with clean towel.
When dough doubles in size, gently brush dough with milk with a pastry brush. The milk will give the bread a beautiful shine when baked.
BE VERY CAREFUL OR YOU WILL DEFLATE BREAD. Just be delicate and you will be fine.
The first time I did this I did deflate my bread a little, but since I've learned my lesson, I've done it with success plenty of times.

Bake bread at 375 degrees for 35 to 40 minutes.
Let bread cool for few minutes, and release bread from pans.
Continue to cool bread on rack.
Enjoy!

busy, busy, busy!
I started watching my 2 month old nephew on Monday.

He is the most adorable little munchkin ever! If he's awake, he wants to be held! I am thoroughly enjoying it!
Today I have to run some errands, go grocery shopping and I am having lunch with my mother in law. This is my day off from watching the baby. I've gotta squeeze everything in before my kids get off the bus..so I gotta go.
I have a meeting at my son's school tonight to plan for a 3rd grade Mardi Gras party for the children. They will be learning about the history and traditions of New Orleans...so once I get done with that...I plan to work on my post for wheat bread.
I'm glad I'm busy again...geez I don't even have time to watch Golden Girls! And..I missed American Idol last night. Me, my son and my mother in law went to the mall...Grandma wanted to buy her grandson 3 pair of new jeans for school and then she treated us to a large pepperoni pizza at the food court...which I might add, is the best pizza around! (But I am not complaining about missing Golden Girls or American Idol!)

P.S. All the snow has completely melted! We had a solid day of rain and slightly warmer temperatures that washed it all away! Time for spring. We should see daffodils shoots in a couple of weeks!

my life has flat lined
I haven't told you all, but I quit my job at Pier 1. My last day was last week. I was supposed to start watching my 2 month old nephew full time this week, but my niece got sick and also hurt her back and subsequently didn't get her form signed by her doctor to release her back to work after maternity leave. In return, I have had a week off with nothing to do. Now doesn't that sound really silly...nothing to do. Of course there's plenty to do when you live in a big house and have 2 children and a husband and 2 hamsters and 5 chickens.
This morning I watched 2 episodes of Golden Girls...I could not live without this show...and then watched whatever happened to be on that channel in between my dozing and waking for the next few hours. Really, that is so pathetic! Then, around lunch time, I washed a boat load of dishes and then made myself some scrambled eggs and a cup of hot tea.
I did get out once this week...I went to the craft store with my friend. It was good to get out and laugh the day away and catch up on everything. We started out at Starbucks, then headed to the craft store, and then another craft store, and then to the local Chinese buffet. I stuffed myself on General Tso's chicken, honey chicken, white rice, seafood something or other, chicken and vegetables, and chicken teriyaki on a stick...hey, it's a buffet, I was trying to get my money's worth! ha ha!
The other highlight of my week was watching 2 nights in a row of American Idol. I really really love watching this show! I have watched every season except the very first and I am addicted. Steven Tyler from Aerosmith and Jennifer Lopez are judging along with Randy Jackson this season. I love the new judges...it's funny cause I didn't think the show would do well without Simon...but I have already forgot about Simon! My youngest son is insisting that Steven Tyler is a girl. My husband and I cannot convince him otherwise. It's really quite funny, but I don't think Steven Tyler would think it was so funny, then again, maybe he would.
Well, enough about my boring week!

it's snowing again
Each month I have been sharing poems by John Updike from his book called "A Child's Calendar." When the weather turned to 60 degrees just a few days ago, I wasn't really in the mood to post it...but now...all that's changed with the snow piling up outside! Hope you enjoy it. For those of you who don't know, this poem really describes February in northeast America.

P.S. I just measured our snow with a ruler and we have 7 inches. It's almost midnight now and the snow is supposed to be tapering off soon...we'll see about that!
